Tasty recipe for a healthy meal

It’s important to serve healthy food and snacks for the children in your care. Here’s an example of an easy to prepare recipe you can try in your home.
Three Bean Chili
(Serves four)
Ingredients
- 1 yellow onion
- 2 green peppers
- 2 15-ounce cans diced tomatoes
- 1 can red beans
- 1 can black beans
- 1 can garbanzo beans
- 1 can corn
- 2 tablespoons olive oil
- 2 teaspoons cumin
- 2 teaspoons chili powder
- 1 teaspoon salt
- 1/2 teaspoon black pepper
Instructions
- Wash all vegetables.
- Remove skin from onion and cut into small pieces.
- Remove stem and seeds from green peppers and cut into small pieces.
- Drain cans of beans and corn and rinse contents thoroughly.
- Measure and add olive oil, onion and green pepper to a large stock pot.
- Stir and let cook on medium heat for 5 minutes.
- Add beans, corn, tomatoes, cumin, chili powder, salt and pepper to the stock pot.
- Reduce heat to low and let cook for 25 minutes.
- Remove the stock pot from the stove. Let cool for 5-10 minutes.
- Serve warm. Enjoy!
